INGREDIENTS
1 packet of Catalano's Seafood Australian Black Tiger Prawns 200g - COOKED, PEELED & TAIL ON
1 loaf of sourdough, sliced
lemon wedge
Fresh herbs, dill & parsley
sea salt & black pepper
Tzatziki Ingredients:
½ (100g) continental cucumber
2 cups (450g) Greek yoghurt
¼ bunch mint, herbs picked & finely chopped
½ cup dill, finely chopped
2 garlic cloves, minced
1 lemon, juiced
1 tsp sea salt
1 tbsp extra virgin olive oil, to serve
METHOD
Grate the continental cucumber. Use paper towels or a nut bag to squeeze out the excess water.
Place the grated cucumber in a mixing bowl with all of the remaining ingredients, except for the extra virgin olive oil. Mix until combined and season to taste with black pepper.
Serve with a drizzle of extra virgin olive oil.
