Fish Tacos with Avocado & Feta Spread

INGREDIENTS

• 1 packet of Catalano's Seafood Australian Blue Spot Emperor

• 6 small tacos

• 1 red cabbage

• 2 limes

Avocado & Feta Spread:

• 125g feta

• handful of parsley

• 2 avocados

• 1 jalapeno pepper

Fish Marinade:

• 1 packet of fajita spice blend

• ½ cup plain flour

• 1 tsp brown sugar

• pinch of salt

• 1 tbsp olive oil

• juice of ½ lime

Pickled Onions:

• 1 red onion, finely sliced

• 100ml white vinegar

• 50ml water

• 1 tsp chilli flakes

METHOD

1. Slice red onion and mix with vinegar, water and chilli flakes. Let sit in fridge for at least 20 minutes.

2. Mix fajita spice blend, flour, brown sugar, salt, olive oil and lime juice.

3. Pat down the fish fillets with a paper towel.

4. Coat the fish fillets in the marinade and set aside.

5. Dice the avocado, jalapeno, parsley, feta and mix in a bowl.

6. Slice up some red cabbage and set aside.

7. Heat the pan to a medium-heat and fry each fish fillet until golden brown.

8. Build your tacos. Spread the avocado & feta onto the base of taco, then add your cabbage and fish. Top with the pickled onions.

9. Crumble some feta and parsley on top. Serve with a lime wedges.
