Alex Crisp’s Scandi-Style Prawn Open Sandwich

15min | Serves 2  

Sweet, fresh, creamy and super quick to throw together. My take on the traditional Danish prawn open sandwich makes the perfect seafood addition to your breakfast table! 





















Ingredients


  • Catalanos Cooked Prawns 

  • 2 Slices of bread (traditionally we use rye, but sourdough or brioche work great!) 

  • ½ Cup whole egg mayonaise 

  • ½ Tsp flaky salt 

  • 1/4 Lemon 

  • 1tsp Lemon zest  

  • 1Tbsp dill, chopped

  • ½ Head lettuce 

  • 1 Avocado, sliced  


    Garnish 


  • Sliced cucumber, onion, eggs  

  • Dill 

  • Caviar  

     

    Special Equipment 


  • 5 x bamboo skewers 



Directions


1. Remove tails from prawns and chop into thirds 

2. Mix mayonnaise, salt, lemon juice, lemon zest and chopped dill in a small bowl until fully combined 

3. Add mayonnaise mix to prawns and toss through until they are all fully coated 

4. Toast your bread and remove as it starts to get golden 

5.  Top toast with lettuce, slices of avocado and a big dollop of the creamy prawn mixture 

6. Garnish with dill, slices of lemon, cucumber, onion and caviar.

*Chefs Tips You can adapt this recipe by switching out the herbs for curry powder, hot chilli honey or seafood sauce.
