Alex Crisp’s Seafood Skewers with Thai Red Curry Mayo

15min | Serves 2 Fresh, vibrant and super easy to make. These Seafood skewers are quick and packed full of zesty, fragrant goodness!
Ingredients
Catalanos Premium Marinara Mix
½ Cup corn flour*
1Tsp salt
½ Tsp cracked pepper
3Tbsp whole egg mayonaise
1Tbsp red curry paste
1/2tsp caster sugar
1 Lime
½ Lemongrass stalk, diced fine
Garnish
Fresh coriander & mint
Lime wedges
Special Equipment
5 x bamboo skewers
Directions
1. Remove seafood from packet and pat dry with paper towel
2. Pierce seafood with skewers to create five seafood skewers
3. Combine salt, pepper and cornflour and spread out onto a small plate
4. Dust seafood skewers in cornflour mix until fully coated
5. In a small bowl mix mayonnaise, lime juice, sugar and red curry paste
6. In a separate bowl mix diced lemongrass with salt
6. Get an oiled pan to high heat and add seafood skewers
7. Lower the heat slightly and turn the skewers once golden and crisp on one side
8. When both sides are golden, remove from pan and sprinkle with lemongrass salt
9. Serve with red curry mayonnaise, lime wedges and fresh Asian herbs
Chefs Tips Substitute corn flour for potato, arrowroot or tapioca flour
